Creamy salmon spaghetti

Ingredients
- 150g spaghetti
- 1 tbsp olive oil
- 1 garlic clove, minced
- 1 lemon
- 200g hot smoked salmon, crumbled
- 150ml crème fraiche or double cream
- Handful of fresh dill, roughly chopped (plus extra for serving)
- 50g parmesan, grated
- Salt and cracked black pepper
Cooking instructions
- Bring a large pan of salted water to the boil over a medium heat. Add the spaghetti and cook according to pack instructions.
- Meanwhile, add the oil to a frying pan over a medium heat. Stir in the garlic and cook for 30 seconds or until softened.
- Stir in the lemon zest and hot smoked salmon and allow to heat through, then add the crème fraiche and dill. Continue to cook, stirring regularly until the liquid has reduced. Season to taste.
- As soon as the spaghetti is ready, add it to the sauce and toss together so the spaghetti is coated in the sauce.
- Divide between two bowls and top with a sprinkle of fresh dill and parmesan. Enjoy!
