Ingredients

  • 30g flat leaf parsley
  • 2 garlic cloves, grated or crushed
  • Zest and juice of 2 lemons
  • 1 tbsp extra virgin olive oil

Cooking instructions

  • Roughly chop the parsley then add to a bowl with the remaining ingredients, stir to combine.
  • Spoon over cooked meats, fish or vegetables to serve.

Chef’s tip: Mix through some toasted breadcrumbs for extra crunch and flavour. This is particularly good over stews and casseroles.
