Ingredients

  • 400g frozen peas, defrosted
  • 1 x 400g tin of chickpeas, drained
  • 3 tbsp extra virgin olive oil
  • Juice of 1 lemon
  • 6 tbsp tahini
  • Handful of parsley, roughly chopped
  • 1 ice cube (optional)
  • Sea salt and freshly ground black pepper

To serve:

  • Extra virgin olive oil
  • Sesame seeds
  • Chilli flakes or powder

Cooking instructions

  • In a food processor, blitz together the peas, chickpeas, oil, lemon juice, tahini and most of the parsley, saving a bit to garnish.
  • For an extra creamy texture, add a cube of ice whilst blending and allow to break down completely.
  • Season to taste, then serve with a drizzle of oil and sprinkling of sesame seeds, chilli flakes and reserved parsley. We love to enjoy ours with homemade tortilla chips!
