Salmon Wellington masterclass

Try something different with our beautiful salmon Wellington masterclass in our sky-high London kitchen, all powered by HexClad. A slightly more delicate alternative to the traditional beef, you'll create a delicious fish feast to take home and cook yourself (your whole Wellington!), after an incredible cookery class, full of skills, tips and more.

What to expect

Learn to cook, experience chef-life in a professional kitchen, and enjoy the most incredible city views from the 58th floor of an iconic London skyscraper. Introducing our cooking masterclasses at the Gordon Ramsay Academy, Powered by HexClad.

It's time to switch things up! Perhaps you've already mastered the beef Wellington, you don't eat meat, or you just love a good piece of fish, then this is the perfect class for you. 

This fish version still requires the classic layers of a Wellington, and this masterclass will teach you how to get a golden, crispy finish to the pastry, the essential pancake wrapper and a succulent filling. Our recipe includes a watercress cream mousse in the centre, to help keep the fish moist and add a beautiful fresh flavour.  

This class really is a full-on experience; a trip up to the 58th floor of the iconic 22 Bishopsgate skyscraper, a 3-hour cookery masterclass featuring chef demonstrations and tasters, all your own hands-on cooking of your own Wellington and a creamy white wine sauce, ready to take home. You will then have a stunning meal to cook for loved ones in your own kitchen, and the skills to keep making it time and again.

Your class will finish with a tasting plate of our chef's Wellington, with all the trimmings, and a drink to enjoy along with our panoramic London views.

Please note, this class will focus on cooking fish and is therefore not advised for those who would prefer to not cook or eat fish. 

Class details

Class timings: 3-hour cooking experience (please allow around 3.5 hours for the total experience)

Please see individual booking for start and finish times (for example, 1pm-4pm or 2pm-5pm on selected days, subject to availability)

Arrival: We advise arriving 30 minutes before your class is due to start, to allow for entrance and welcome at 22 Bishopsgate. 

Class size: 8-10 guests

You will be doing some cooking in pairs so bring a friend or team up with a classmate – it’s a great way to meet new people who love food as much as you do!

Typical recipes and skills (we’ll cook the best available on the day, so we might surprise you!):

  • Chef demonstration and explanation relating to salmon cuts and preparation
  • Making dill crêpes and a fragrant watercress and lemon mousse
  • Wrapping and finishing with puff pastry and fish scale decoration
  • Making a creamy white wine and herb sauce
  • Accompanying side suggestions and recipes
