We're bringing a twist to Gordon's classic beef Wellington with this impressive salmon Wellington masterclass. Learn how to get the perfect combination of crispy pastry, zesty, herby fillings and succulent salmon, ready to wow guests. You'll finish the class with your prepared Wellington to take home and cook, plus you'll have mastered a beautiful white wine sauce and hearty side to complete your meal.

What to expect

Our Masterclasses are the perfect opportunity for you to master one particular dish or skill, all within a relaxed 3-hour class. 

Although we do love a traditional beef Wellington, this lighter, fresher, zingier version is a perfect addition to your entertaining repetoire. In this 3-hour class you'll concentrate on making all the crucial layers of a Wellington - wafer-thin dill pancakes, a creamy layer with watercress and spinach, and succulent salmon in the middle.

To go alongside, there's a fragrant white wine sauce to learn, and a herby salad that will be your go-to accompaniment. 

Is it a Wellington, is it en croute, who cares - whatever it is, we just know it's delicious.

If you can bring along your own container to take away your Wellingtons, that would help us reduce our packaging use, although we'll always have some handy if you forget!

Please note, this class will focus on cooking fish and is therefore not advised for those who would prefer not to, or cannot eat fish. 

Class details

3-hour classes: Starting 9.30am, 11am or 1pm (please check individual booking)

Arrive up to 30 minutes before your class to check in at reception and there’s no rush at the end – you might be too busy eating your delicious dishes!

Class size: Maximum 10-12 guests, some elements may require working in pairs with a classmate, don’t worry if you’ve come alone – it’s a great way to meet new people and have a laugh

Typical recipes and skills (we’ll cook the best available on the day, so we might surprise you!):

  • How to make a Salmon Wellington
  • Making dill pancakes and a creamy herb filling
  • Assembling the Wellington with baking instructions for perfect salmon 
  • White wine sauce and salad accompaniments, all to take home
