Coriander spice rub

Ingredients
- 3 tbsp coriander seeds
- 3 tbsp cumin seeds
- 1 tbsp black peppercorns
- 2 tbsp chilli flakes
- 2 tbsp sea salt
- 3 tbsp light brown sugar
Cooking instructions
- Toast the coriander and cumin seeds in a dry pan until fragrant, about 30 seconds.
- Tip all the spices into a pestle and mortar and grind into a course powder.
- Place in a sealed jar and leave for a week to mature, then use within 3 months.
