Spicy honey and herb nuts

These deliciously sticky, savoury and sweet roasted nuts make the perfect party food nibble or an incredible edible gift for Christmas. Make a big batch as they won't last long! Parcel up in jars or pretty boxes for friends and family or just leave in a big bowl for everyone to enjoy with drinks.

Ingredients

  • 200g mixed nuts (any mix of almonds, cashews, hazelnuts, macadamias, peanuts, pecans, pistachios, walnuts…)
  • 3 tbsp runny honey
  • 1 tbsp finely chopped rosemary leaves
  • 1 tbsp finely chopped thyme leaves
  • 1 tbsp olive oil
  • 1 tsp sea salt
  • ½ -1 tsp mild chilli powder (optional)

Cooking instructions

  • Preheat the oven to 200ºC/180ºC fan/Gas 6. Line a baking tray with baking paper.
  • Mix everything together in a bowl so that the nuts are evenly coated.
  • Spread out on the prepared baking tray then roast for 10-12 minutes or until lightly toasted.
  • Allow to cool completely. Break up any large lumps although you will still have some small sticky clusters. Store in an airtight container if not serving immediately.

Chef's tip

We like the fiery kick of a little chilli powder but you can easily leave this out if you prefer. Swap for some freshly ground black pepper or a little grated lemon or orange zest for a twist.
