Seasonal menu: Winter

Time to cosy up with some delicious inspiration for winter with our seasonal cooking class. There’s still plenty of wonderful produce to enjoy despite the weather, and our chefs will be passing on plenty of cooking tips and tricks as you make a three-course menu featuring earthy root veg, game and sweet, sticky fruits.

What to expect

We love cooking with ingredients when they’re at their best. Our Seasonal classes are a great way to explore produce that reflects the time of year, whether that’s fresh tender veg in spring or the orchard fruits of autumn.

Winter cooking is all about comfort, and that’s exactly what you’ll be focussing on here. In our winter class, you’ll learn to make the most of what’s around, transforming vegetables into creamy soups, tackling game meat for a rich main, and practising your pastry skills with a fruit tart.

A feast to enjoy in class, plus recipes and lots of new techniques you’ll be able to practise again and again at home.  

Class details

Class starts: 10am, arrive anytime from 9.30am to check in at reception

Class finishes: 3-3.30pm, depending on lunch break and time to finish dishes

Class size: Maximum 12 guests, some elements may require working in pairs with a classmate, don’t worry if you’ve come alone – it’s a great way to meet new people and have a laugh

Typical recipes and skills (we’ll cook the best available on the day, so we might surprise you!):

  • Starter of celeriac soup with crispy chorizo
  • Main of pancetta-wrapped guinea fowl, glazed carrots and herb mash
  • Dessert of fig and almond tart
