What to expect

Holly Dixon really is an 'Athlete in the kitchen', having worked at one of Gordon's restaurants for over five years before focusing on training and racing as an elite runner. Holly is keen to share her experience from both behind the pass and on the track, whilst exploring some delicious new recipes with us here at the Academy.

One thing Holly knows about is the importance of having a balanced diet, but how does she manage this with a mostly plant-based lifestyle? 

Protein is important for muscle recovery, which anyone undertaking any kind of activity will need. Meat, fish and dairy products are often the go-to sources of protein, but more and more of us are seeking to include more plant-based ingredients and meals in our diets. 

So, whether you're just getting yourself moving with a brisk morning walk or training hard for your next challenge, it can help to know how to rustle up a delicious meal that is going to boost your daily intake of protein from pulses, vegetables, nuts, grains and seeds.

Learn how to cook recipes to suit your daily routine, from breakfast to dinner and dessert, and head off home with plenty of inspiration and motivation for whatever your next wellbeing goal is!

Class details

3-hour class: A morning or afternoon at the Academy (please check timings of your individual booking)

Arrive up to 30 minutes before your class to check in at reception and there’s no rush at the end – you might be too busy eating your delicious dishes!

Class size: Maximum 10-12 guests, some elements may require working in pairs with a classmate, don’t worry if you’ve come alone – it’s a great way to meet new people and have a laugh

  • Welcome from Holly and our chefs - a chance to chat cooking and competing, plants and protein, and much more! 
  • How to kickstart your day with a hearty breakfast
  • Snacks or lunch on-the-go sorted, with a protein-packed bread you can top however you like
  • Transforming pulses into a flavour-packed dinner 
  • Yes, you can still enjoy a dessert - getting inventive with ingredients like tofu to make a sweet treat
