Bake in 90: Meringues

Crispy on the outside, marshmallow-soft on the inside, there’s a lot to get right when it comes to meringues. Learn all the tricks for perfect pavlovas and more with our evening baking class. You’ll whisk up glossy meringues and turn them into delicious desserts to take home.  


What to expect

No time to bake? Think again. With our speedy Bake nights you can master a specific skill or bake in no time. In each short evening class, we’ll get you hands-on and baking as quickly as possible, watching and following our chef teachers as they guide you through core techniques and recipes.

Over- or under-whisking, not enough sugar, too hot an oven… there are lots of pitfalls to avoid when making meringues. In just 90 minutes we’ll help you become confident in the basics of meringues – ideal for kisses, nests and pavlovas – plus, show you how to turn them into showstopping puds such as chocolate-filled cakes or gooey stacks.

Class details

Class starts: 6.30pm, arrive anytime from 6pm to check in at reception

Class finishes: 8pm, stay to dine with your class or take home the dishes you’ve made

Class size: Maximum 12 guests, some elements may require working in pairs with a classmate, don’t worry if you’ve come alone – it’s a great way to meet new people and have a laugh

Typical recipes and skills (we’ll cook the best available on the day, so we might surprise you!):

  • How to make meringues, plus flavouring, shaping and baking
  • Fresh fruit pavlovas
  • Meringue dessert, for example a hazelnut and chocolate ganache meringue cake
