Ditch the plain sausages, we've got some easy and delicious new ideas for outdoor dining this summer. Our day class will help you get confident preparing flavour-packed veg, meat, breads, fruit and more, ready for any feast (whatever the weather!). You'll end up inspired to try new summer combinations both indoors and outdoors.

What to expect

We love cooking with ingredients when they’re at their best. Our Seasonal classes are a great way to explore produce that reflects the time of year, whether that’s fresh tender veg in spring or the orchard fruits of autumn.

For this summer class, we're focussing on outdoor inspiration - simple recipes and flavour combinations that you can use at home to create an incredible feast, both on and off the grill. We'll use herbs and spices, rubs and marinades to amp up meat and veg, plus make your own sauces, sides and even desserts that will make summer entertaining delicious.

We'll be charring and griddling some dishes on traditional hobs to demonstrate techniques you can use on a barbecue or outdoor grill, with the focus on preparation, flavours and accompaniments. 

You'll have plenty to enjoy tasting for lunch and throughout the day, plus extra rubs and sauces to take home ready for your own feast!

Class details

Class starts: 10am, arrive anytime from 9.30am to check in at reception

Class finishes: 3-3.30pm, depending on lunch break and time to finish dishes

Class size: Maximum 12 guests, some elements may require working in pairs with a classmate, don’t worry if you’ve come alone – it’s a great way to meet new people and have a laugh

Typical recipes and skills (we’ll cook the best available on the day, so we might surprise you!):

  • Griddled flatbreads
  • Charred peaches (or nectarines) with burrata and herb sauce
  • Corn 'ribs' with spicy butter and dip
  • Classic dry rub for meat/veg
  • Homemade barbecue sauce
  • Caramelised pineapple or tropical fruit dessert
  • Please note, this class does not include use of actual barbecues or open fire cooking
