Makes 8-10
Ingredients
- 100g nuts, such as blanched almonds, cashews, skinned hazelnuts or pecans, or any mix of nuts
- 250g pitted dates
- 2 tbsp cocoa powder
- 2 tbsp peanut butter or any nut butter
Cooking instructions
- Using a food processor, blitz the nuts until fairly well ground.
- Add the dates, cocoa powder and peanut butter and blend again until it comes together in sticky clumps.
- Using an ice cream scoop or tablespoon, scoop the mixture into equal-sized dollops onto a baking tray or plate. You can make them as big or small as you like for snacking on.
- Using your hands, press the mixture together and roll into balls.
- To serve, we topped ours with another sprinkling of chopped almonds, but you could roll them in chopped nuts, cocoa powder or desiccated coconut, if you like!
