Date energy balls

These date energy balls from Tilly Ramsay are a perfect summer snack when you fancy something sweet but don't want to use the oven. Simply blend all of the ingredients together and shape into balls! Make them your own by changing the type of nuts used.

Ingredients

  • 100g nuts, such as blanched almonds, cashews, skinned hazelnuts or pecans, or any mix of nuts
  • 250g pitted dates
  • 2 tbsp cocoa powder
  • 2 tbsp peanut butter or any nut butter

Cooking instructions

  • Using a food processor, blitz the nuts until fairly well ground.
  • Add the dates, cocoa powder and peanut butter and blend again until it comes together in sticky clumps.
  • Using an ice cream scoop or tablespoon, scoop the mixture into equal-sized dollops onto a baking tray or plate. You can make them as big or small as you like for snacking on.
  • Using your hands, press the mixture together and roll into balls.
  • To serve, we topped ours with another sprinkling of chopped almonds, but you could roll them in chopped nuts, cocoa powder or desiccated coconut, if you like!
