Pork, apple and cheese sausage rolls

Sausage rolls are such a treat, and our pork, cheese and apple version is sure to impress. The addition of smoked paprika makes the glaze extra golden, so they don't only taste good but look incredible, too! These are perfect for summer picnics or lunches al fresco. We also love them for a party!

Ingredients

  • 1 tbsp rapeseed or vegetable oil, plus 1 tsp for the glaze
  • 1 onion, finely sliced
  • 20g butter
  • 2 apples
  • 500g pork mince
  • 300g cheddar cheese, grated
  • Handful of fresh parsley, roughly chopped
  • 2 sheets of puff pastry
  • 1 egg, separated
  • 1 tsp smoked paprika
  • Black sesame seeds
  • Sea salt and freshly ground black pepper

Cooking instructions

  • Preheat the oven to 200°C/180°C fan/Gas 6. Line a baking tray with baking paper.
  • Heat the oil in a frying pan and add the onion, butter and a pinch of salt. Cook on a low heat for 10-15 minutes until golden and caramelised. Set aside in a large mixing bowl to cool slightly.
  • Peel and dice your apples into 1cm cubes and add to the onion bowl with the pork mince, grated cheese and chopped parsley. Season with salt and pepper and give it a good mix.
  • Unroll the puff pastry sheet (or roll out to 0.5cm thick if using a block) and shape half the filling into a long sausage down the middle.
  • Brush some of the separated egg white over the exposed pastry edges to help it stick together, then roll the pastry over the filling to fully cover, pressing the edges together to seal. If there is lots of excess pastry, trim off most of the overlap before sealing.
  • Use a fork to crimp the edges, then cut into individual sausage rolls (as large as you like) and lay them onto the lined baking tray.
  • Repeat this process with your second sheet of puff pastry and the remaining filling.
  • Mix together the additional 1 tsp oil and paprika to make a paste, then beat in the egg yolk to make the glaze.
  • Brush the rolls all over with the glaze then sprinkle with sesame seeds.
  • Bake for 25-30 minutes, or until the pastry is crisp and golden and the filling is piping hot in the middle and fully cooked through.
